Winter Green Salad
Serves 12

Here’s a salad that we think even the kids will want to load onto their plate. Loaded with great fresh, seasonal tastes!

 

INGREDIENTS

Dressing:

 3/4 cups Balkan-style yogurt
2 tbsp olive oil
2 tsp lemon zest
2 tbsp lemon juice
2 tbsp chopped chives
1 tbsp prepared horseradish
1/4 tsp salt and pepper, each

 

Salad:

5 cups torn stemmed kale
1 apple, thinly sliced
1 radicchio head, torn
1/2 bulb fennel, cored and thinly sliced
1 Belgian endive head, leaves separated
3/4 cups toasted walnut halves


Directions:

 

  1. In small bowl, whisk together yogurt, oil, lemon zest, lemon juice, chives, horseradish, salt and pepper.
  1. In bowl, toss together kale, apple, radicchio, fennel and endive. Drizzle with Horseradish Dressing, tossing to combine.
  1. Transfer to platter, sprinkle with walnuts and serve.
