Here’s a salad that we think even the kids will want to load onto their plate. Loaded with great fresh, seasonal tastes!
3/4 cups Balkan-style yogurt
2 tbsp olive oil
2 tsp lemon zest
2 tbsp lemon juice
2 tbsp chopped chives
1 tbsp prepared horseradish
1/4 tsp salt and pepper, each
5 cups torn stemmed kale
1 apple, thinly sliced
1 radicchio head, torn
1/2 bulb fennel, cored and thinly sliced
1 Belgian endive head, leaves separated
3/4 cups toasted walnut halves
- In small bowl, whisk together yogurt, oil, lemon zest, lemon juice, chives, horseradish, salt and pepper.
- In bowl, toss together kale, apple, radicchio, fennel and endive. Drizzle with Horseradish Dressing, tossing to combine.
- Transfer to platter, sprinkle with walnuts and serve.
